This month's cookbook club will meet in person with special guest chef Peggi Ince-Whiting of Kyoto Restaurant. Peggi will talk about her career, demonstrate sushi making, and offer a sushi tasting.

Peggi Ince-Whiting has been a sushi chef in Utah for over 40 years and is one of the few female chefs to work behind a sushi bar in Japan. In the 1970s, Peggi trained in Tokyo under a sushi master, and after returning to her home state of Utah, she made space for herself in the very male-dominated field of sushi making. She opened her own restaurant, Ichiban, and over the years has received numerous awards and recognition in both English and Japanese publications, including Bon Appétit Magazine and Fine Cooking Magazine. Now she continues her legacy as the head sushi chef at Kyoto Japanese Restaurant, one of the oldest Japanese restaurants in Salt Lake City.
