Escape to Brighton's historic Wasatch Mountain Lodge for six chef-crafted courses, open-fire cooking, and a mountain dining experience designed to bring people together. Leave the usual dinner reservation behind and spend an evening in the mountains instead.
Your evening begins with a ride aboard Brighton's historic mining cart shuttle or a short stroll along a softly lit forest path to the Wasatch Mountain Lodge, where six thoughtfully prepared courses and the beauty of Big Cottonwood Canyon set the stage for the night.
Throughout the evening, each course is served family-style to encourage guests to share, linger, and enjoy the experience together. As daylight fades, the mountains become part of the meal, and, weather permitting, dessert is served outdoors beneath the trees.
This season's featured menu includes:
- Chef’s Choice Canapés featuring fresh and local proteins and produce
- Local Artisan Meats & Cheeses with fresh baked bread from the Brighton Bakery
- Dutch Oven Jalapeño Cheddar Biscuits
- Chopped Brisket with house-made BBQ sauce, compound butter, and pickled red onions
- Fire Roasted Chicken Leg
- Niman Ranch Beef Tenderloin, campfire style
- Utah Trout (chef’s choice of local game; fish varies weekly by availability)
- Seasonal salads and sides (vary weekly based on seasonality and availability)
- Fire roasted Utah sweet corn
- Seasonal local fruit and vegetables
- Honey glazed cornbread with whipped butter and local honey, served fireside on the patio
- Chef's Choice Dessert and a S’mores Station
Campfire Cookouts don't have to end with dessert. Stay overnight in Brighton's rustic mountain lodge and enjoy everything Big Cottonwood Canyon has to offer, from peaceful mornings on the porch to another day exploring the mountains.
Logistics:
- Guests should park near the Brighton Lodge in the southern corner of the main parking lot. From there you can take the complimentary Brighton mining cart shuttle to the Wasatch Mountain Lodge or walk the short, lighted path through the woods on the east side of Brighton Lodge.
- Seating begins at 6:00 PM, with dinner service starting promptly at 6:30 PM. Campfire Cookouts are a single-seating experience with one coordinated dinner service for all guests. Guests arriving after 7:00 PM may not be accommodated.
Alcohol and payment:
- Guests may bring their own wine. A $25 corkage fee applies per 750 ml bottle.
- A full bar with alcoholic beverages, cocktails, and premium non-alcoholic options will be available for separate purchase during the event.
Groups and cancellation:
- If your party is booking separately, contact the dining team ahead of time so they can try to seat your group together.
- Reservations cancelled less than 48 hours before the event are not eligible for a refund.
Accessibility and questions:
- The event takes place in a mountain environment; guests may encounter uneven terrain, gravel, dirt paths, stairs, steep grades, and other natural conditions while accessing the venue.
