Bonjour, et bienvenue! We are delighted to have you join Chef Berkley. French pastry, at its core, is a science of precision, but it is executed with a passion that transforms simple ingredients into something truly exquisite. Today, we focus on the fundamental dough of the French repertoire: Pâte à Choux (choux paste).
This intensive, hands-on workshop will teach the essential techniques to create delicate, airy, and perfectly hollow pastries—the foundation for both classic éclairs and cream puffs.

- Pâte à Choux to make éclairs & cream puffs
- Chocolate ganache
- Chantilly
- No-bake template to take home

What to expect:
- You’ll work together with other students in a fun, hands-on environment led by professional chef instructors.
- You will be working in small groups, sharing workstations and equipment.
- Kids will be standing, cooking, and working for most of the class.
Safety and attire:
- Comfortable, closed-toe shoes
- Long hair tied back
- Long pants recommended; short sleeves are OK, but not sleeveless.
