Inspired by the rich culinary traditions of Oaxaca, we invite you to discover the technique behind one of Mexico’s most beloved sauces: mole. We’ll build a deeply layered mole from scratch. You’ll learn how to balance the sweet, savory, spicy and aromatic elements of a great mole before using it to bake flavorful chicken thighs.

Relaxed, welcoming and designed with the home cook in mind, this is a class you can take straight into your own kitchen for a cozy weekend family lunch. Come learn the technique, enjoy a leisurely Saturday at the table, and bring a little Oaxaca-inspired warmth to your fall cooking.

What to expect in a hands-on Harmons Cooking School class:
- You'll work together with other students in a fun, hands-on environment led by our professional chef instructors.
- You will be working in small groups, sharing workstations and equipment.
- Classes are 2 to 2 1/2 hours unless otherwise noted above.
- You will be standing, cooking, and working for most of the class. Please wear comfortable, closed-toe shoes and have long hair tied back.
