Long tables, full plates, and summer evenings in the woods. Campfire Cookouts return to Brighton with 6-course dinners, open-fire cooking, and nights spent beneath the trees at the historic Wasatch Mountain Lodge.
Each evening begins with passed appetizers and a welcome beverage before settling in for a generous family-style dinner prepared over open campfires and the lodge's original stone hearth. Expect plenty to eat, seconds to go around, and dishes meant to be shared across the table. As the sun drops behind the ridgeline, dessert is served outside beneath the trees while the sounds of Big Cottonwood Canyon settle in for the evening.

- Chef’s Choice Canapés featuring fresh and local proteins and produce
- Local artisan meats & cheeses with fresh baked bread from the Brighton Bakery
- Cooked fireside and served family style
- Dutch Oven Jalapeño Cheddar Biscuits
- Chopped Brisket, House Made BBQ Sauce, compound butter, and pickled red onions
- Fire Roasted Chicken Leg
- Niman Ranch Beef Tenderloin Campfire Style
- Utah Trout (Chefs’ Choice of local game; fish varies weekly by availability)
- Seasonal salads (sides vary weekly based on seasonality and availability)
- Fire Roasted Utah Sweet Corn
- Seasonal local fruit and vegetables
- Honey Glazed Cornbread with whipped butter and local honey
- Chef's Choice Dessert
- S’mores Station
A full bar featuring craft cocktails, wine, local beer, whiskey, and premium non-alcoholic beverages will be available for separate purchase throughout the evening. Guests are also welcome to bring their own wine; a $25 corkage fee applies per 750ml bottle.
Make a night of it. Skip the drive home and stay in the heart of Big Cottonwood Canyon with summer lodging at Brighton. Spend the evening around the campfire, wake up in the Wasatch, and enjoy another day in the mountains.
Seating begins at 6:00 PM, with dinner service starting promptly at 6:30 PM. Campfire Cookouts are a single-seating experience with one coordinated dinner service for all guests. To help the evening run smoothly, guests arriving after 7:00 PM may not be accommodated.
Reservations cancelled less than 48 hours before the event are not eligible for a refund.
Parking & access: Guests should park near the Brighton Lodge in the southern corner of the main parking lot. From there, you can either take the complimentary Brighton mining cart shuttle to the Wasatch Mountain Lodge or enjoy a short walk through the woods along the lighted path on the east side of Brighton Lodge.
Accessibility: Campfire Cookouts take place in a mountain environment. Guests may encounter uneven terrain, gravel, dirt paths, stairs, steep grades, and other natural mountain conditions while accessing the venue. If you or someone in your group may need accessibility accommodations, please contact us prior to the event and our team will do our best to assist.
