Roll, shape, and savor the comfort of Italy with handmade orecchiette, hearty soup, and a sweet sip of Vin Santo. Step into the warmth of the Italian countryside this October as we celebrate the art of simple, soulful cooking. In this hands-on class, you’ll craft your own orecchiette—the traditional “little ears” pasta of Southern Italy—and fold them into a hearty white bean and kale soup simmered with olive oil, garlic, and herbs. We’ll brighten the evening with a crisp endive and pear salad tossed in white balsamic and topped with gorgonzola and candied pecans. To finish, enjoy classic amaretti cookies alongside a sip of Vin Santo—Italy’s sweetest farewell.

You’ll work together with other students in a hands-on class led by professional chef instructors. Students work in small groups, sharing workstations and equipment. Classes are 2 to 2½ hours unless otherwise noted above. You’ll be standing, cooking, and working for most of the class. Please wear comfortable, closed-toe shoes and tie back long hair.
